Okay, the weather has not given spring a kind introduction, so we decided to take the initiative and say, "Spring, we love you. You are very welcome here," by making a pretty vegan dessert on its behalf.

No rocket science to this recipe, but it was delicious, cheerful, and pretty.

Spring Sorbet Surprise
Serves 1

Ingredients (for one):
  • 1 scoop raspberry sorbet
  • 1 scoop mango sorbet
  • 2 Tb.  vanilla soy yogurt
  • 3/4 Tb. chopped almonds
  • 3-5 blackberries
  • 1 mint sprig
Directions:
Scoop raspberry sorbet into a small tumbler, pressing down with a spoon to smooth. Add a tablespoon of yogurt, then sprinkle half the almonds on top. 

Scoop your mango sorbet neatly on top, then repeat with the yogurt-and-nut thing. Put the berries on top and garnish with mint. Chill until time to eat.
